RUM OLD FASHION

Ingredients

• 50ml dark rum
• 1 tsp sugar syrup
• few dashes of orange bitters
• ice
• strip of orange peel,to garnish

Method

• STEP 1

Put half the rum, the sugar syrup and bitters in a mixing glass or jug. Add three ice cubes and stir slowly with a mixing spoon until the outside of the glass feels cold. Add the rest of the rum and a few more ice cubes, then stir to just combine.

• STEP 2

Strain the drink into an ice-filled rocks glass or tumbler and garnish with the strip of orange peel.

HOT TODDY

Ingredients

• 50ml whisky
• 3 tsp honey
• 1 cinnamon stick, snapped in half
• 1 lemon, half juiced and half sliced
• 2 cloves

Method

• STEP 1

Whisk the whisky and honey together and split between 2 heatproof glasses. Add half of the cinnamon stick to each, then top up with 200ml boiling water.

• STEP 2

Add a splash of lemon juice to each, then taste and add more to your preference. Finish each with a slice of lemon, studded with a clove, and serve immediately.

AMARETTO ESPRESSO MARTINI

Ingredients

• 50ml freshly brewed espresso
• 100ml vodka
• 50ml amaretto
• 1 tbsp sugar syrup or runny honey
• ice

Method

• STEP 1

Put two martini glasses in the fridge to chill.

• STEP 2

Pour all the ingredients into a cocktail shaker and shake until it feels icy cold in your hand. Strain into the chilled glasses to serve.
